How to Make Brownies


5 tablespoons unsalted butter, plus more for greasing the pan

5 ounces Valrhona bittersweet chocolate, chopped

1/2 cup granulated sugar

1/4 cup light brown sugar

2 large eggs

1/2 teaspoon pure vanilla extract

2 tablespoon unsweetened cocoa powder

3/4 cup all-purpose flour

Pinch of sea salt



Preheat the oven tho 350 degrees F. Grease a 12 x 9 – inch baking pan and line it with parchment paper.

In a double boiler over low heat, melt the 5 tablespoons of butter with chocolate. Let cool slightly and stir in the sugars, eggs, and vanilla. In a medium bowl, combine the cocoa, flour, and salt. Add the flour mixture to the chocolate mixture and stir until just combined. Pour this into the prepared pan. Bake until the brownies are set in the middle and the edges are just slightly dry, 15 to 20 minutes.

Let cool completely. The brownies can be prepared up to 4 days in advance and stored in an airtight container.
