How to make Greek Salad:
Greek salads are part of Mediterranean style of eating, crisp lettuce, crumbly feta cheese, fragrant herbs and vinegary olives thrown together in a bowl. Use unstoned Kalamata olives, if possible, as they have more flavor than other kinds, but warn your guests in case they ‘re not expecting them.
Ingredients:
about 250 g feta cheese, crumbled into big pieces or cut into cubes
about 200 g vinegary olives
2 red onions, thinly sliced
2 mini cucumbers, halved lengthways, then thinly sliced diagonally
4 large tomatoes, cut into chunks
a dew sprigs of mint, torn
DRESSING
6 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
sea salt and freshly ground black pepper
Directions:
Put the lettuce in a large bowl. Add the cheese, olives, onions, cucumbers and tomatoes.
To make the dressing, put the olive oil, lemon juice, salt and pepper in a jug or bowl and beat with a fork, then pour over the salad. Alternatively sprinkle the dressing ingredients onto the salad separately.
Top the salad with the oregano and mint, and serve.
